Several universities will consider a deferred entry, but you will have to justify your request.
In case you decide to follow an academic programme for one year, you may then be assessed on the grades you will obtain during this year.  Therefore, your request needs to be well thought out in order not to lose your offer if your results become insufficient which may happen, specially in France when students follow the « Classes Préparatoires », traditionally known for their highly severe grading system and which does not have an equivalent elsewhere.   Likewise, if you decide to take a Gap Year and/or do an internship for one year, you will have to outline precisely your project so that it is approved by the university.
